DOP EVO Oil: An excellence of the Italian agricultural heritage

The extra virgin olive oil (EVO) which receives the Protected Designation of Origin (DOP) is a product of Italian agri-food mastery and constitutes gastronomic excellence. The DOP brand is a quality recognition assigned by the European Union which identifies all those foods whose production, transformation and preparation phases take place in a specific geographical area, according to rigid quality standards and traditional methods. It is the entire production process that must respect the rules dictated by a specification for a product to receive DOP certification, from the olive harvesting system of a well-identified territory, to the milling and extraction of the oil up to the requirements that the final product must respect.
