PGI EVOO - PGI Extra virgin olive oil
The Protected Geographical Indication (PGI) is a quality mark assigned to agricultural or food products for which even a single phase of the production process has a link with a precise geographical area of reference which gives the product uniqueness. The PGI brand, according to the European regulation Ce 510/2006, is a means that the EU has made available to agri-food companies for the protection of "typical" products whose qualities are closely connected to the territory to which they belong. The extra virgin olive oils that bear this brand are EVO oils whose production and transformation takes place in a limited geographical area, generally a region. But to obtain this recognition, extra virgin olive oils must comply with the rules indicated in the "production specification" which specifies various parameters and are: the cultivars to be used, the geographical area, the methods and times of collection, the maximum production of olives per hectare , the maximum yield of the olives in oil, the type of fruit and its characteristic aromas, the intensity of the bitter and spicy, the color and some chemical parameters that are important for the geographical area and usually more restrictive than those of the law . Furthermore, the producers of EVO PGI oils must comply with the strict rules contained in the specification, compliance with which is guaranteed by an independent control body.
