The Molise region has a territory made up of small hills about 250 meters above sea level and large mountainous areas; the climate is a meeting between the Mediterranean and the continental one with winter having abundant rainfall, mainly snow and hot summers mitigated by sea breezes. This over time has allowed the rooting of olive trees, which have now become secular, including the variety "Aurina di Venafro" and the "Gentile" of Larino which form the basis of the PDO Molise together with the cultivars "Oliva nera di Colletorto" and "Leccino". There are also the "White Paesana", the "Cock's Spur" and "Olivastro Rosciola". The olive harvest is generally done by hand and the result is a yellow extra virgin olive oil with some green tones.
