Tuscany EVOO and Tuscany extra vergin olive oil
The temperate climate and scarce rainfall, its hills with calcareous soil make Tuscany a perfect territory for the cultivation of olive trees. In fact, the olive tree is quite widespread with about 93,000 hectares of olive growing area, 90% located in hilly areas. Tuscany is among the six Italian regions that produce the most extra virgin olive oil with about 430 mills and an annual production of about 250,000 quintals. The most common varieties are Frantoio, Moraiolo, Leccino and Pendolino. The Evo oil that is obtained is among the most appreciated in Italy and has been recognized by the European Union as the PGI "Protected Geographical Indication" for the whole region. In addition to the recognition of the "Toscano IGP" extra virgin olive oil, 5 DOP (protected designation of origin) have been recognized, such as: Chianti Classico DOP extra virgin olive oil, Lucca DOP extra virgin olive oil, Seggiano DOP extra virgin olive oil, Terre di Siena DOP extra virgin olive oil and Tuscan IGP extra virgin olive oil. These PDOs have in common the low free acidity (0.5%), an important antioxidant content (100-150 mg/Kg), and a good presence of oleic acid. The color is intense green with a tendency to yellow, the fruity smell of olive and the light taste of bitter and pungent.
