The geographical position of the Basilicata region, or from the Latin Lucania, is very favorable for the production of olives and extra virgin olive oil and the characteristics of the territory made up of fertile mountains and hills which slope down towards the Tyrrhenian Sea and Ionio sea, make it the perfect habitat for olive trees. The native cultivars of the area are mainly Racioppella, Majatica, Ogliarola del Vulture and Carpellese. The extra virgin olive oil obtained from these varieties has an intense fruity flavour, slightly bitter and a very balanced spiciness. In the kitchen its use is multiple, it pairs perfectly with grilled meats, fish and grilled vegetables or even with salads and typical dishes such as "Ciaudedda" composed of artichokes, potatoes, onion, bacon to which broad beans are added.
