The Beginning of the Story
More than twenty years ago, my father, Bacci Pietro, took over the management of an olive grove on the outskirts of Florence. At that time, harvesting was still done by hand with plastic rakes, climbing the trees with ladders. Thinking back, we must have been crazy. To harvest around ten quintals of olives, it took an entire day with several people. Today, thanks to modern equipment, a single person can harvest the same quantity in one working day.
At the time, I was employed by a gardening company in Piedmont and helped with the harvest whenever I could. Over time, I decided to take over my father's business and expand it. In addition to the historic olive grove, I acquired a new plot in the Valdarno, also in the province of Florence, giving new momentum to the cultivation of Moraiolo, Frantoio, and Leccino olives.

The Production Process
Our production process follows a well-defined path: olive harvesting takes place in October and November at the right stage of ripeness to ensure the highest content of polyphenols and antioxidants. The olives are processed within a few hours of harvesting at our trusted mill, using cold pressing to preserve all the oil’s nutritional and organoleptic properties.
