Ingredients for the Cold Rice Cake with Avocado, Tomato Tartare and Basil Cream:

200 g of rice for salads

50 g of tomato

1 spring onion

1 avocado

Parsley

Tuscan IGP Extra Virgin Olive Oil Fattoria di Busona

Salt

Lemon juice and zest

Ingredients for the basil cream:

120 g of basil leaves

50 g of rocket

50 g of walnuts

1/2 lemon

200 ml of Fattoria di Busona Tuscan PGI Extra Virgin Olive Oil

Preparation

To prepare the Tortino, we start with the basil cream: blend together the basil, rocket, walnuts, lemon juice and oil. Season with salt and pepper. Prepare the tomato tartare by blanching and peeling the tomatoes, then cutting them and seasoning them with spring onion. Cook the rice, cool it and season it with oil, salt and pepper. Finally, prepare the avocado and compose the tart in a pasta bowl, layering rice, avocado and tomato tartare. Complete with the basil cream.
