For the biscuit dough:
- 5 eggs at room temperature
- 100 grams of granulated sugar
- A sachet of vanillin
- 80 ml of Extra Virgin Olive Oil "Passo di Corvo" by Agriculture d'Italia
- 80 grams of white flour
For the cream:
- 6 egg yolks
- 40 grams of sugar

Procedure:
1. Prepare the biscuit dough by separating the egg yolks from the egg whites and whipping the latter until stiff with a pinch of salt. Add the sugar and egg yolks one at a time, incorporating well, then add the oil and finally the sifted flour with the vanilla.
2. Pour the dough onto a baking tray lined with baking paper and bake at 180 degrees for 8-10 minutes.
3. For the cream, heat the oil in a saucepan, then add the sugar, lemon zest and ginger. Beat the egg yolks and add the oil mixture, bringing it back to the heat until it boils.
4. Roll up the biscuit dough, spread it with the cream and add the fresh fruit. Decorate as desired.
