“Io Bio” Colli Etruschi extra virgin olive oil has an intense, slightly veiled emerald green colour. Produced with the caninese variety, harvested from olive trees at an altitude of 270m with an average age of 40 years.
- Aroma: the nose opens with medium intensity green fruitiness accompanied by strong vegetal notes of leaf and artichoke
- Flavour: the bitter and spicy taste are remarkably marked and harmonious with each other. It closes by confirming the sensations experienced on the nose and with decisive hints of aromatic herbs and walnut husk. Excellent aromatic harmony.
- Pairings: perfect on oily fish appetizers, tuna salads, bean soups, first courses with meat sauce, aged hard cheeses.
