Organic Balsamic Vinegar of Modena IGP 250 ml
The BIO Balsamic Vinegar of Modena PGI is produced with grapes from seven different vines, each of which brings distinctive aromatic notes. To these is added aged wine vinegar so as to allow the balance between sweet and sour, typical of Balsamic Vinegar of Modena. The aging in oak barrels completes the production process.
Pairings Balsamic: grilled red meat, aged cheeses, raw fish, grilled vegetables, caviar and shellfish, fresh fruit.

Organic Balsamic Vinegar of Modena IGP 250 ml
Balsamic Vinegar of Modena PGI is produced with grapes from seven specific grape varieties (Lambrusco, Sangiovese, Trebbiano, Albana, Ancellotta, Fortana and Montuni) and each brings different and distinctive aromatic notes. Aged wine vinegar is skilfully added to these grapes so as to allow for the balance between sweet and sour, typical of the balsamic vinegar of Modena. The qualities vary according to the selected raw materials. The density derives from the quantity of cooked grape must used. Finally, the refinement in oak barrels completes. The production process, allowing the vinegars to release inimitable tastes. The more traditional woods used are oak and chestnut. The inclusion of cherry, ash and black locust wood is more recent, thanks to the latter types the resistance of the barrels has considerably improved and also the plurality of colours, scents and flavors has increased. Thanks to the high percentage of grape must contained in the balsamic vinegar and in the white dressing and to the period of aging in barrels, these acquire flavors of fruit and spices, the taste is followed by a pleasant persistent sweetness. They are delicious on the palate with notes of grapes and figs that give a caramelized and enveloping flavour.
