Our company, LAMIA OLIO, is located in the Salaparuta area in what is the "Libero municipal consortium of Trapani". The company was founded in 1983 when my father started cultivation with a few plots. Over time, seeing my passion for the countryside, he has continued over the years to expand the production which today is definitively entrusted to me. The company extends over 5 hectares planted with 1500 olive trees of the "Nocellara del Belice" variety and is family-run. The extra virgin olive oil is produced with a cold extraction process which keeps the nutritional characteristics of the product unaltered. The Nocellara del Belice is a particularly large and tasty olive, which takes its name from the homonymous cultivar produced in the Belice Valley which in 1998 obtained the DOP (Protected Designation of Origin) certification, and has a dual aptitude, because in addition to production of the excellent extra virgin olive oil, also gives us an excellent table olive. The harvest takes place from the end of September and an EVO oil is obtained which has a yellow to intense green color and very low acidity, below 0.5%. With an interesting aroma to the nose, the extra virgin olive oil has a medium intensity olive fruitiness with notes of almond, green tomato, cut grass, artichoke and aromatic herbs. The taste is bitter, slightly spicy and with a hint of sweetness. The important feature is that of having a high content of polyphenols (340 mg/kg). In the kitchen, LAMIA extra virgin olive oil is excellent raw for seasoning soups, vegetables and salads, but also cooked it expresses all its quality with roasts and fries, both meat and fish.
