The Andrea Ardizzone farm is located near the city of Syracuse, an ancient city rich in history which was the homeland of the mathematician Archimedes and was the capital of Sicily for centuries, until it was conquered by the Arabs in 878. The Mediterranean scrub characterizes the Syracusan flora and palm trees, prickly pears, olive groves and citrus groves dominate the landscape. The proximity to the sea, the Ionian (where there is the protected marine area of Plemmirio which is an important observatory for the stationing of cetaceans: fin whales, dolphins, sperm whales and other giants of the sea) determines a cool climate with little rain in winter and extremely hot and dry in summer often dominated by the sirocco wind. In August 2021 the highest temperature value in Italy and Europe was recorded +48.8°C. In this area the Andrea Ardizzone farm has an olive grove where it grows olives of the Biancolilla and Nocellara del Belice varieties from which two excellent quality oils are obtained: the Biancolilla variety, which has light fruity characteristics and the oil obtained from the More intense and full-bodied Nocellara.
The intent of the company is to offer a high quality product, obtained with the harvest of the olives in the right ripeness, with the help of modern machinery that does not create stress for the olives and from the milling, which takes place directly inside the company on the same day of the collection, by means of a modern modular plant with a continuous cycle "frantoio della Pierilasi" owned by the same company and for exclusive use. The cold-pressed oil is stored in vacuum-packed stainless steel tanks in a cooled environment at the right constant temperature.
The peculiarity of the cultivation with biological systems and the milling of the olives harvested only in the owned olive grove, guarantees the uniqueness of the product without the possibility of mixing with productions of other companies which can take place in common mills.
The phases of the milling start with the defoliation with a suction fan; then washing with non-stagnant decalcified water; continues with hammer pressing and kneading: 25-30 minutes at a maximum operating temperature of 28° C, obtaining a minimum percentage of acidity and a high number of peroxides and protection from external light; to finish with a two-phase centrifugation without adding water and finally the separation in a centrifuge at 6500 rpm.
Particular attention is paid to the equipment: in fact, at the end of the milling both the crusher hammer, the kneader and the separator are disassembled and cleaned of the processing residues, avoiding the formation of mold and bacteria which can ruin the product subsequently milled.
For conservation, the separated oil is placed directly into stainless steel silos in the storage room which is adjacent to the mill and kept at a temperature below 17°C and kept under pressure with food grade nitrogen.
Subsequently, bottling takes place in the special room adjacent to the storage room and the oil produced is directly introduced from the silos to the automatic filler, to then be packaged in 0.500 liter bottles. and 1 liter cans. and 5 lt.
The Ardizzone farm also pays particular attention to renewable energy sources and since 2012 has been equipped with a 75 kW photovoltaic system
