Olive oil obtained by mechanical procedures with cold extraction in a modern oil mill. Food pairings: meat, fish and boiled vegetables, crustaceans, molluscs, cold rice, fried food, fish and white meat carpaccio, fresh cheeses. Some connoisseurs recognize in the oil of this variety, especially in certain years, aromas of basil and mint, of artichokes and almonds.
