Superior category olive oil obtained directly from olives and solely by mechanical means (Reg. CE 1019/2002, art.3). It is the result of accurate cultivation techniques integrated by mechanical harvesting and cold extraction in a modern oil mill. The recommended food pairings are: meat, fish and boiled vegetables, raw and cooked crustaceans, shellfish, cold rice, fried food, fish and white meat carpaccio, fresh cheeses, grilled fish.
