“IL SALTO” Extra Virgin Olive Oil is a 100% Italian extra virgin olive oil, obtained from olives exclusively produced by TENUTA GIANNONE.
It is a blend obtained from the balanced mix of mainly historic native cultivars, among which we mention the precious Tonda Iblea, Verdese, Nocellara Etnea and Biancolilla, to which a small percentage of Coratina is usually added.
Drupes harvested by hand and pressed separately in a cold mill within 6-12 hours. Mono-varietal filtering and storage in steel silos under nitrogen head. Final blend obtained after tasting and chemical analysis.
“il SALTO” is a very harmonious extra virgin olive oil, with very low acidity and with superior organoleptic qualities. Intense golden yellow color with delicate green hues. Medium-green fruity, with pronounced notes of green tomato and aromatic fresh herbs, such as basil and parsley.
Fine and characterful on the palate, with tones of celery and lettuce. Bitter and spicy well balanced note.
