BONI' EVOO is a fine extra virgin olive oil blend made up of four cultivars: Borrettara, Biancollilla, Cerasuola and Nocellara typical of the province of Trapani. The acidity is very low (0.14) while the presence of polyphenols and antioxidants is high. The color is green with golden yellow reflections and the taste is fruity, slightly bitter and spicy with an almond aftertaste. A slight tingling is felt when swallowing which is a valuable characteristic of Nocellara oil, especially if it has just been produced. Raw it reveals all its quality especially in minestrone, vegetable puree or salads; when cooked it is excellent for the preparation of sauces, roasts of both meat and fish or for frying.
