The “Torre delle Monache” Extra Virgin Olive Oil is the result of the producer's passion for the land and the aim of obtaining healthy, genuine and high quality products through the combination of accurate rules of ancient agriculture and systems of latest generation transformation.
Precisely this passion and accuracy gives our oil excellent characteristics.
Processing:
Very short processing times; generally the time that passes between harvesting and processing the olives is around three hours.
For the milling of our product we choose excellent state-of-the-art continuous cycle oil mills at national level which allow us to proceed with the extraction of the oil in a very short time.
The continuous two-phase cycle, without any addition of water in the extraction process, guarantees that the qualities present in the olive are preserved, maintaining all the organoleptic characteristics of the oil. The oil is extracted directly from the olive paste in its entirety, maintaining all its aromatic and polyphenolic characteristics.
This type of processing allows the temperature to be kept low, avoiding oxidation processes of the oil, keeping the quality of the oil intact, preserving the most valuable aromatic parts of the olive.
