"Intosso" pickled green olives. Glass jar 180 g.
The olives are harvested when they are still green, exclusively by hand by detaching every single drupe from the tree. Subsequently, after having selected and calibrated them, they are debittered with the Sevillian method, subjected to washing, fermented and put in brine.
Of adequate size, with a light green colour, the nose shows strong hints of fresh olives and lactic sensations. In the mouth they are fleshy and crunchy, sapid and slightly bitter. The freestone is excellent, in fact the pulp detaches very easily from the stone.
