The Martoccia Farm is a small family-run business that has been tending the olive groves for more than a hundred years. It was born with the commitment of Savino Martoccia, eldest son of the family, who continues his father's experience thanks to the knowledge of agricultural practices learned from his father Sabatino and perfected with the many experiences acquired in the best local farms. With the involvement of his brother Riccardo he definitively dedicated himself to the project of producing his own line of extra virgin olive oil with the use of the Monocultivar Coratina.
The company is located in Minervino Murge (BT), a small Apulian village named the "Balcony of Puglia" a few kilometers from the sea, between the gates of the Alta Murgia National Park and the Southern Apennines. It is an area particularly suitable for olive growing thanks to the fantastic local microclimate.
The Coratina variety, among the most widespread in the area for its resistance to different temperatures, is among the most appreciated and stands out for its peculiar organoleptic characteristics: the high concentration of polyphenols, with a strong antioxidant power that brings great benefits for health, and the almost non-existence of peroxides. Among the polyphenols present, the most important is oleuropein to which scientific studies attribute “beneficial properties against numerous diseases such as neoplasms, cardiovascular diseases, diabetes and neurodegenerative diseases. These properties are not limited to the known antioxidant power of polyphenols; more recent studies have, in fact, begun to demonstrate the effective clinical efficacy on humans given by the administration of oleuropein and to reveal the molecular and cellular mechanisms with which this substance and its metabolites exert these effects, which are the basis of the nutritional virtues commonly associated with the so-called Mediterranean diet "(editor's note: Wikipedia).
To preserve these fantastic qualities, the fruit is harvested at the right degree of ripeness and pressed within twenty-four hours of harvesting at temperatures not exceeding 22 degrees, so as to obtain a juice with an acidity of less than 0.2%.
The flavor of Martoccia EVO oil immerses you in the warm Apulian atmosphere, with a yellow color tending to green and golden shades with a fresh taste and intense notes of green almond and artichoke, a bitter and slightly spicy aftertaste due to the high presence of polyphenols.
