The Hortus Terrae project was born in 2018, with the aim of enhancing a territory that is still mostly "uncontaminated." Many olive groves left in a state of abandonment are taken over and re-cultivated and today the company manages about 500 trees and owns another 150 of properties that all arise around Lake Bolsena: volcanic and fertile land that allows for diversified and responsible agriculture, attentive to the care of the territory.
The study and direct observation of plants and their habitat are the basis of the activity carried out with passion and dedication; every year the olive trees are pruned to maintain the right vitality and energy. Their care is continuous in the following seasons, also through the use of organic fertilizers which provide the necessary nutrients to the plants and at the same time keep the surrounding environment intact and healthy.
For the olive harvest, Hortus Terrae makes use of electric harvesters and the milling takes place within 12/24 hours in the trusted oil mill, near the farm fields.
Hortus Terrae offers two products, whose organoleptic characteristics change according to the time of harvest and the different ripening of the olive tree (early October or mid-November).
• Emerald EVO: a multivarietal made up of 4 cultivars (canino, leccino, frantoio and maurino), fruity with a green color with golden reflections, with a spicy taste and medium intensity bitter notes. Oil with precious organoleptic properties and a strong taste, excellent for roasts, bruschetta and legume-based soups
• Rustic EVO: Canino monovarietal, ripe fruity with an almond scent and slightly spicy. The decisive notes make it an ideal extra virgin olive oil for appetizers, side dishes and salads, enhancing the tastes and excellent for second courses based on legumes and red meat.
For our extra virgin olive oils, the prevalent cultivar is the canino, the predominant and typical cultivar of the Vulsini Mountains, in minor quantities we find the frantoio, the leccino, the moraiolo and the maurino.
